How to make a traditional Cowpea beans plat.

oook today we are making the good old Cowpea , known for being planted in the African countries
Cowpea is a delicious nutritious rich in potassium with good amount of calcium, magnesium and phosphorus. It also has small amount of iron, sodium, zinc, copper, manganese and selenium. Cowpea is rich in vitamin A and C. It has good amount of thiamine, riboflavin, niacin, vitamin B6 and pantothenic acid. It also has small amount of folate. Cow peas contains around 25% protein and low in fat. Consuming 100 gm of cow pea gives around 343 calories.
ok let's get started first you will need :
-1/2 kg cowpea bean rested in water during 24h before cooking that is an important step.
-1 cups of olive oil .
-1 medium size onion 
- salt for taste of course Almadnos and saffron.
-2 medium size tomatoes
now the steps to follow :
-cut the onion to small peaces and let it boil in the mix of oil and mashed tomatoes for about 5 min.
-add the cowpea beans after the mixture starts boiling .
-add some of the water the beans were rested in to add the flavor.
-and let the whole thing on the fire for 30 min .
And your good to go , to be consumed with some bread , or a spoon .
